Ling is a member of the cod family, although in appearance it is much like an eel. Ling is a firm fleshed fish which does not break up on cooking as much as cod or haddock, for example. It has a mild flavour of its own and is popular in France and Belgium as well as among the coastal communities of northern Scotland.
