Mussels are best when they are allowed to grow in clean nutrient rich sea water. In such an environment, mussels can filter out the plankton and grow plump large succulent meats. The cold clean waters around Shetland are ideal for cultivating mussels, producing some of the best quality mussels available anywhere.

Cultivated mussels are grown on ropes suspended from floats in sheltered locations away from the worst of the high seas associated with winter storms. On to these ropes the young mussels attaches themselves, having been randomly carried there with all the other plankton of the sea by ocean currents. From these ropes, suspended just clear of the sea bed, they grow in cool nutrient rich seawater clear of predators sand and grit.

After two to three years of growth the mussels are harvested. They are then washed, graded and inspected prior to packing for onward shipping to customers by chilled transport.
