Seafood 60 North select only the very best of scallops for their customers. Scallops have to be landed for market soon after capture and in so doing provide a raw material which can be used to produce a top quality scallop product with associated extended shelf life properties.

Proper cutting and handling during processing makes a tremendous difference to the appearance and keeping quality of the scallop. Scallops are a premium product and should be skilfully cut from the shell then properly cleaned of any non meat / roe parts. Such proper handling will reduce the possibility of white meat staining and reduce spoilage bacteria counts on the meats.

Around Scotland there are two types of scallops commercially fished. The larger of the two is the king scallop producing larger meats generally of a size counting 15 to 40 / kg. The smaller queen scallop producing meats counting 40 to 100 / kg. Scallops have a sweet rich taste and are regarded as one of the worlds premium seafoods.
